Massimo Mele Heads Byron at Byron Champagne Dinner

The Byron at Byron Resort and Spa, in association with the Champagne Bureau, is thrilled to announce Massimo Mele as Chef for their annual Vogue Living Champagne Dinner, to be held Friday October 31. Massimo will prepare a four course degustation dinner for the event, to be matched to five of the world’s finest Champagnes.

“I’m humbled to be invited to cook for this dinner to be honest, it’s a pretty big deal” said Massimo Mele. “And The Byron at Byron is an amazing space to be cooking in. For me it’s about showcasing my style of food and my style of eating. Which is sharing, everybody getting involved”.

Domayne’s Chief Stylist Sue Kropp will style the Byron at Byron Restaurant in fashion for the evening, a highlight in the national culinary calendar. Previous Chefs to cook for the Byron at Byron Vogue Living Champagne Dinner include Mark Best, Ryan Squires and Justin North.

“The logistics of this event are serious” said The Byron at Byron’s General Manager Lyn Parché “One year we had ninety Philippe Starck chairs trucked in. For some years we have used Waterford Crystal. That’s five types of glass, one for each Champagne. And the styling is everything. Sue travels the world and so is able to bring to us the latest look. Last year there were fresh roses and candles hanging from the ceiling and on the tables were dozens of brightly coloured glass candelabras. And the guest list is fabulously eclectic”.

Massimo Mele was destined to carry on his family tradition of growing and serving great Italian food. Born in Tasmania and raised in Naples he watched his Nonna, aunties and mother prepare food every day and he worked in the family restaurant ‘La Bella Napoli’ from a young age. In 1999 he was named “Apprentice of the Year” at the Restaurant & Catering Awards and was also a National Finalist in the Nestle Golden Chefs Hat Award. In 2004 Massimo opened Mud Bar and Restaurant in Launceston, which after just one year received a Chefs Hat. He was named the winner of the ‘People’s Choice Award’ at the Lexus Young Chef of the Year Competition in 2005, which saw him cook for then Prime Minister John Howard.

In 2006 Massimo moved back to Italy to master his craft, spending time on the family farm learning, picking and cooking fresh produce. From 2008 to 2013 he ran multiple kitchens for the Hugos Group in Sydney, during which time the group won multiple awards ranging from Best Informal Italian to Best Pizza Restaurant in Australia.

Earlier this year Massimo took over the kitchen as Executive Chef of newly renovated and re-launched La Scala on Jersey in Paddington Sydney, which brings to life his ethos of Tutti A Tavola – ‘everyone to the table’.

The following five Champagnes will be featured at the 2014 Vogue Living Champagne Dinner – Champagne Bollinger Rosé NV, Champagne AYALA Blanc de Blancs (grand Cru) 2007 Vintage, Champagne Pol Roger reserve NV, Champagne Jacquart Brut Mosaique NV, Champagne Louis Roederer Brut Vintage 2007.

One of the Northern Rivers’ most celebrated musicians will play for the annual Fathers’ Day lunch celebration at The Byron at Byron Resort and Spa.

Cheynne Murphy’s raw talent has won him a strong national audience. Rhythms Magazine said of his music “A big, warm, sprawling folk-rock… unpretentiously earnest”. We gained him here on the Northern Rivers in 2008, where he debuted his first solo EP at BluesFest.

After discovering three chords and the truth in his final year at university, Cheynne dropped the security blanket of his corporate marketing career and was rewarded with

a global publishing deal with Warner Chappell/Alberts. He has received multiple music industry awards and has supported the likes of The Church, Richard Clapton, Christine Anu and The Choir Boys.

Cheynne’s honesty is total. Of his new album  “A Horse Called Freedom” he said “The album draws a lot of inspiration with my own struggles managing a blended family with four kids. Even though we are not wearing painted tribal colours we are still modern day warriors. We’re grappling with technology, with money. It’s less physically demanding but more psychologically demanding. I have a lot of empathy with other fathers. It’s challenging being a parent and I’ve found that music is therapy for me. It’s been a constant companion and song-writing is a balm for my soul”.

From the Spit: Roast leg of Byron Bay Pork, roasted apple sauce and pickled red cabbage.

From the Fire pit: Marinated peppercorn grass fed scotch fillet. Salmon Teriyaki with Japanese garnish.

From the Buffet: Selection of Antipasto: Local Salumi meats, Bangalow Cheeses and pickled vegetables. Steamed prawns with cocktail sauce and lemon. Slow roasted pork belly in fennel seeds, dried chilli and rosemary. Beef daube, mushrooms, bacon, shallots and bay leaf. Eggplant, bocconcini and tomato moussaka. Roast potato with thyme and garlic.

The Byron at Byron is thrilled to present extreme health experts Dr. Glenn Singleman and Heather Swan for a night of mind-blowing inspiration.

This husband and wife team has set three World Records in extreme sport, including the world’s highest BASEjump in a wingsuit over the Himalayas. The achievement is made even more remarkable by the fact that Heather was a corporate executive who was afraid of heights.  Over six years she trained with Glenn to become physically fit, mentally focused and emotionally tough enough to climb a Himalayan mountain and fly off the top.

“Heather’s transformation was inspirational,” said Glenn. “She had never planned to climb anything higher than the corporate ladder but by overcoming her fears she attained much more than she ever imagined possible”.

By changing her diet and exercise regime she changed her body fat content and became physically strong. Through techniques like meditation and visualization she overcame her fears and by joining Glenn on a ‘Vision Quest’ their relationship “was deepened and enriched beyond measure”.

Accompanied by spectacular photos and videos, Heather and Glenn will share their story and their process at the Byron at Byron.

Dr. Glenn Singleman is a world famous professional adventurer, expedition doctor and award winning documentary filmmaker. He has accompanied expeditions to Antarctica, the North West Passage, the Himalaya and the Andes. He was a part of James Cameron’s recent expedition to the deepest part of the ocean; the Marianas Trench and has accompanied the Hollywood director on expeditions to the Titanic and the hydrothermal vents. His own films have won 25 international awards and been seen by hundreds of millions of people. He has twice been named as one of the ‘Top 5 Presenters in Australia’ and is a popular media commentator on extreme sport, fear and managing risk.

Heather is an award-winning author of two non-fiction books and freelance photojournalist. Before her radical career change she was a corporate executive managing International and Australian businesses. She has received a ‘Spirit of Adventure Award’ from Australian Geographic and has presented to hundreds of audiences around the world.

Heather and Glenn have been married for 18 years and together have four children. They have appeared twice on Australian Story as well as 60 Minutes, A Current Affair, 7:30 Report, Sunrise, HBO Real Sports with Bryant Gumbel, Revealed and Wide World of Sports (to name a few).

Join them as they share their recipe for being brave, being healthy and having a great relationship. Hear how you too can tap into the wilder side of life over some intriguing menu choices that will match the flavour of the evening.
