Byron’s Sun Bistro opens!

Following an intensive seven months of construction Sunrise Beach’s new local has thrown open its doors. The Sun Bistro, at the end of Bayshore Drive, opened to the public on Tuesday December 16.

Suzy Campbell from Sunrise Beach has lived in Byron Bay since 1969. “With the Suffolk Park Hotel all the locals go there, you can get to know your neighbours” said Suzy. “That’s what The Sun Bistro will do for Sunrise. We’ll be able to wander down there and have a meal and a glass of wine. It will make Sunrise more of a community”.

“Our team are working tirelessly” said Development Director Jeremy Holmes. “Bennett Constructions have done an amazing job in bringing our vision to life and we are thrilled that they will continue to work with us now on the construction at North Byron Beach Resort. We’re hoping for a great response from the community”.

The Sun will open seven days a week from 10:00am – 10:00pm and 10:00am to midnight Friday and Saturdays. The Sun houses a bistro, bar, sports lounge and TAB, undercover childrens’ play lounge, back deck, landscaped gardens, car park and drive through bottle shop, all nestled into a stunning landscape backdrop.

A complimentary shuttle bus will operate seven nights a week from 6:00pm servicing Sunrise, the Arts and Industry Estate and Ewingsdale.

Construction is well underway at the new Sun Bistro on Bayshore Drive in Byron Bay and on track for a December 2014 opening.

The contract for construction of the Sun Bistro was awarded to Lismore’s Bennett Constructions in June. “This is a very unique job and we needed to find a contractor who would work with us to a stringent timeframe and with a capability to think outside of the box” said Development Director Jeremy Holmes. “The building was relocated from the old Byron Bay Beach Resort in four pieces back in May, then reconstructed in its new location with some major additions and modifications. We were really glad we could keep this work local”.

Bennett Constructions has been a family owned and operated business since Frank Bennett set up shop in 1938. In 1956 he welcomed son Col Bennett to the firm and upon Col’s passing in 2003 his wife Margaret continued the commitment and dedication that had been the firm’s trademark. In 2005 Margaret’s son-in-law Darryl Piper was appointed Managing Director, a position he maintains today.

Alan Campbell, who lives in Evans Head with his wife and four young children, is Bennett Construction’s Project Supervisor at The Sun Bistro. “It’s a good job, a great job” said Alan. “We don’t get to do a lot of jobs that involve so much hardwood and carpentry work. A lot of buildings these days are all concrete, not a lot of hardwood. It’s got great finishes.

“For me it’s good that this job is reasonably close to home, it saves driving to the Gold Coast and all over the place. And the kids play areas at the Bistro will make it easier to go out. It’s pretty hard to go out with kids”.

Plans are being finalised for the rebuild of Bayshore Drive as part of the North Byron Beach Resort, east of the Sun Bistro site, including a new road surface, formal car parking and footpaths, bins and a toilet and shower for use by the general public. “We will integrated these works in with the development of the Resort and hope to have them underway early next year” said Jeremy Holmes.

Planning continues to progress for the Byron Bay Heritage Tourist Railway, the proposed rail shuttle from Sunrise Beach to Byron township which is being funded entirely by the North Byron Beach Resort. “We continue to work closely with Council, the Rail Trail group and state government to progress the train” said Jeremy Holmes.

One of the Northern Rivers’ most celebrated musicians will play for the annual Fathers’ Day lunch celebration at The Byron at Byron Resort and Spa.

Cheynne Murphy’s raw talent has won him a strong national audience. Rhythms Magazine said of his music “A big, warm, sprawling folk-rock… unpretentiously earnest”. We gained him here on the Northern Rivers in 2008, where he debuted his first solo EP at BluesFest.

After discovering three chords and the truth in his final year at university, Cheynne dropped the security blanket of his corporate marketing career and was rewarded with

a global publishing deal with Warner Chappell/Alberts. He has received multiple music industry awards and has supported the likes of The Church, Richard Clapton, Christine Anu and The Choir Boys.

Cheynne’s honesty is total. Of his new album  “A Horse Called Freedom” he said “The album draws a lot of inspiration with my own struggles managing a blended family with four kids. Even though we are not wearing painted tribal colours we are still modern day warriors. We’re grappling with technology, with money. It’s less physically demanding but more psychologically demanding. I have a lot of empathy with other fathers. It’s challenging being a parent and I’ve found that music is therapy for me. It’s been a constant companion and song-writing is a balm for my soul”.

Sunday 7th September, from 12:30pm. $79 includes mains, desserts and a complimentary glass of beer or wine on arrival. Children may dine from the childrens’ menu.

From the Spit: Roast leg of Byron Bay Pork, roasted apple sauce and pickled red cabbage.

From the Fire pit: Marinated peppercorn grass fed scotch fillet. Salmon Teriyaki with Japanese garnish.

From the Buffet: Selection of Antipasto: Local Salumi meats, Bangalow Cheeses and pickled vegetables. Steamed prawns with cocktail sauce and lemon. Slow roasted pork belly in fennel seeds, dried chilli and rosemary. Beef daube, mushrooms, bacon, shallots and bay leaf. Eggplant, bocconcini and tomato moussaka. Roast potato with thyme and garlic.
